The Bichot family have holdings in some of Burgundy’s most iconic vineyards (Chambertin, Echezeaux, Grands Echezeaux, Richebourg, Malconsorts… the list goes on) but also buy fruit from quality-minded growers to produce wines such as this exemplary Crémant de Bourgogne. 100% Chardonnay, 30% of which is barrel-fermented for extra richness and complexity, Pure spends 16 months on the lees prior to disgorgement. Its fine, persistent mousse and cleansing finish provide confirmation of its class.
