Vassaltis’s Santorini Assyrtiko is a true benchmark for the island’s wines – but that doesn’t do justice to how thrilling a wine it is. The 2023 has playful aromas of stone fruit, ripe citrus, bread and wet stone, but its calling cards are shimmering acidity and a resounding saline character. There’s some nice weight and texture too owing, in part, to seven months on the lees (in steel tanks). Blended from sites around the village of Vourvoulos.
