Léon is a gorgeous introduction to one of Pouilly’s top producers, Jonathan Pabiot. Grown on soils of clay and flint, the wine is raised in a combination of concrete (40%), steel (40%) and neutral oak. The result is a Sauvignon that’s energetic and expressive, with a lush, rounded mid-palate balanced by fresh acidity and a cleansing “wet stone” finish. This cuvée is named after Joanathan’s son and also his great-grandfather Léon, the first Pabiot to make wine in Pouilly.
