The 2022 Santorini Assyrtiko is a wine of incredible purity and freshness. It’s a blend of grapes from well-sited parcels around the island, fermented and raised exclusively in steel tank. The mid-palate is embonpoint owing to several months’ lees contact, so this wine tapers majestically to a long and astonishingly saline finish. A mesmerising match for fried calamari or indeed quality fish ‘n’ chips. Drink 2023 to 2025.
