Oak can overwhelm Sauvignon Blanc but not in the hands of Jonathan Pabiot. The 2022 Eurythmie is a stunning wine: concentrated, voluptuous yet as fresh and digeste as you’d expect from Pabiot, one of the Loire’s most talented young winemakers. Its seductive oaky aroma gradually gives way to more subtle notes of tarte tatin and gunflint. This will pair brilliantly with asparagus and poached salmon.
